Recipes the World Forgot
Checking in today with one of my favorite little segments: Recipes the World Forgot. Or in other words, I want to tell you about a couple of recipes that exist in the deep, dark recesses of this nearly decade old blog that you probably need in your life but you may have missed.
All the recipes I highlight in the Recipes the World Forgot series are dishes we love and continue to eat all the time even though many of the recipes were posted years ago.
It’s like finding your most favorite pair of jeans hidden in the deep, dark depths of your closet that you thought you had lost forever! Er, kind of? I suppose seven year old jeans may not be the best fashion advice (plus, you probably shouldn’t trust me with fashion tips anyway). Good thing food never goes out of style!

I LOVE you doing these posts. I don’t think you need to develop any new recipes, just start reposting your old ones. Thanks, we made Chicken Stacks to night and they were great. Served it over quinoa, then mixed it all together the next day. Thank you.
I made the pesto chicken tonight……..so good! I just love it when you do “Recipes the World Forgot”. I always discover one or more recipes that I think I just cannot live without. Thank you, Mel for all your hard work and your generosity in sharing all these wonderful recipes with us. I truly think you are amazing.
I just put the Slow Cooker Chicken Stacks on the menu for this week. I usually double the recipe and use the leftovers to make the Crispy Southwest Chicken Wraps in the next day or so. Love your recipes!!
I just made your creamy peanut butter pie this week for Pi day! That and your lemon cream pie. Both were huge hits! Love it when you do these posts. Thanks Mel! You truly are a rock star!!
I make the marinated caprese salad all the time. I love it!
The pesto grilled chicken is one of our favorites! I made a huge batch of the marinade last summer, put it in large muffin tins to freeze, used a little warm water and a knife to remove from the tins, and put them in freezer bags. Then I can marinade some chicken and broil rather than grill it during the long Minnesota winter when I am too wimpy to use the grill. and I can hardly wait for fresh basil to make the Caprese salad 🙂
Oh and I didn’t even see the peanut butter pie on there! Also one of my very favorite desserts! Right up there with Berries on a Cloud! Basically, my family would never eat if it weren’t for your recipes!
We made pesto chicken on St. Patrick’s day… one of my ultimate favorites for eating in pasta, salad, on sandwiches but mostly just by itself! So good!
We made it for St. Patrick’s day too! So yummy! And the leftovers made a great pesto chicken pizza.

Aw, what happy memories. I love when you do this series. Your southwest chicken stacks were on of the first recipes I made from your blog when I first got married, along with the breadsticks. And your pesto marinated chicken is EASILY my husbands favorite way to eat chicken. He actually said, “This is the best chicken I have ever eaten!” a few Sunday’s ago when we had it for dinner. You wouldn’t believe how many good and memorable stories I have from making your recipes for my family. We love you!

The chicken enchilada pasta is my husband’s all time favorite meal. Whenever I talk about it, people get the strangest look on their face because who would think pasta and mexican flavors go together. But they do in this recipe perfectly. Thanks so much Mel!

These are some of our favorites! We eat the southwest chicken stacks on a regular basis. It’s always a pleaser because everyone can put their own toppings on to taste. I’ve made the peanut butter pie several times to go with take-in meals for new moms. And those cheesecake bites….pure heaven right there! I am definitely trying those breadsticks soon!! Thanks for all the great recipes! I don’t know what we’d all do without you!!
